- 2 bananas, mashed

- 1 large sweet potato, peeled, grated
- 4 medium eggs, room temperature
- 2 tablespoons chopped chives
- 3 tablespoons sifted coconut flour
- Salt and pepper
To serve with:
- Fried eggs
- Avocado, sliced
Instructions:
- Preheat waffle iron.
- Squeeze the grated sweet potato to remove excess liquid, and place in a large bowl.
- In a separate bowl, beat eggs until fluffy.
